Panasonic CF-U1 Toughbook Tablet - What Can I Do With It?

The Panasonic CF-U1 came out in 2008, featuring a 1.3GHz Intel Atom processor, Windows XP, Vista, or 7, built-in 3G, bar code reader, and other options. These were often used for warehouse inventory tracking, construction sites, utility work, public safety, etc.

Today these tablets are showing their age, and can't easily handle modern software or websites. I was hoping to use one for inventory tracking in my pantry, but struggled to get an open source database package going. I also tried gaming, SDR, and video streaming, with mixed success.
