We've been cleaning excess cattail reeds out of our garden pond this summer. I heard they were edible, so I decided to give it a try! (The "corndog" seed puff part isn't the edible part, the roots are!).
Spoiler alert: they don't taste like much and don't have a lot of edible content beneath all the extra "stuff" in the root. We probably harvested them too early to really get the full yield.
