The WEIRD history of modern FOOD

I'm Andres Acevedo, and this is The Market Exit. In this essay, I trace the hidden history of how our food changed. From thousands of years of farmers preserving genetic diversity through mass selection, to a 20th century shift toward Mendelian breeding that concentrated the world's seed supply into the hands of a few corporations. Along the way, I dismantle two of agriculture's most famous legends: hybrid corn and Norman Borlaug's Green Revolution.

This essay features my interviews with Glenn Stone, environmental anthropologist and author of The Agricultural Dilemma; Peter Knutas, an organic farmer in Sweden; and Sébastien Boudet, baker and ancient grains advocate.
